Salmon with Chile-Mango Salsa

I’ve made this dish a couple of times now. It’s a quick and delicious dinner.

Ingredients

  1. 1 10-ounce mango, peeled, pitted, diced
  2. 1/4 cup chopped fresh cilantro
  3. 1/4 cup chopped red onion
  4. 1 tablespoon fresh lime juice
  5. 2 teaspoons minced seeded serrano chili
  6. 1 teaspoon grated lime peel
  7. 1 garlic clove, finely chopped
  8. 2 tablespoons olive oil
  9. 2 6-ounce salmon fillets

Directions

  1. Prepare barbecue (or pan fry on stove set at medium-high heat).
  2. Combine first 7 ingredients in small bowl;
  3. mix in 1 1/2 tablespoons oil
  4. Season salsa with salt and pepper
  5. Brush salmon with remaining 1/2 tablespoon oil
  6. Grill until just opaque in center, about 5 minutes per side
  7. Serve with salsa.
